New chef de cuisine, Benjamin Attwater at Square One Restaurant
Park Hyatt Saigon welcomes Benjamin Attwater (Ben)
as the new chef de cuisine of Square One restaurant, taking over the helm from
Satoru Takeuchi, who moves to Grand Hyatt Macau. In his new role, Ben will
oversee the operation of Square One, the hotel’s Vietnamese seafood and Western
steak restaurant.
Born in Sydney, Australia, Ben completed his chef qualifications in 2004.
Sydney’s food culture has benefited greatly from its diverse ethnic influences,
giving him the opportunity to gain extensive experience in creating
international styles of cuisine, which, in turn, provides him with the knowledge
to cater to a diverse range of tastes.
Ben started his cooking career in 2004 as chef de partie at the “Bayswater
Brasserie” in Sydney, Australia. After that, he travelled to Canada and worked
in the same position at the “Fuze Finer Dining” Indian restaurant and “Le Latini”
Italian restaurant. Ben was most recently head chef at “Eschalot”, the most
awarded modern French restaurant in the southern highlands of Australia.
“My love for Asian cuisine and culture has always made me want to live and work
in Asia. To work in Vietnam is a great opportunity for me to travel and learn
about the Vietnamese culture and food,” said Ben.
