Cuisine imitates art at Park Hyatt
Australian chef Benjamin Attwater isn’t exactly
playing with his food, but he is using inspiration taken from Vietnamese
paintings to create brand new twists on traditional local and foreign dishes.
For the “Art and Cuisine” event from April 20-28 at Park Hyatt Saigon’s
signature Square One Restaurant, the Aussie hash-slinger is creating a range of
brand new dishes, each of which aims to complement a story told by each piece of
Vietnamese artwork displayed in the restaurant.
The portrait and landscape paintings on display, including works by famous
Vietnamese painters Dang Manh Ha, Nguyen Luong Tieu Bach, Do Xuan Doan, Tran
Thanh Ngoc and Tran Luu Hau, will be available for sale after the event.
Attwater has chosen to compliment an earthy painting of an ethnic Dao family
with a dish infused with forest ingredients: Duck Egg Omelette with Pork and
Shiitake Mushrooms.
The painting titled Farmer will go with a rustic rural dish of CharcoalBarbequed
Goat, Pigeon, Beef Ribs and Chicken, a popular dish in the Highlands of Vietnam.
This event takes place at Square One, Park Hyatt Saigon, 2 Lam Son Square,
District 1, from April 20 to 28.
